Toasted Marshmallow Milkshake

So I was catching up on some of the blogs I follow and came across the recipe for Toasted Marshmallow Milkshake. I was missing our campfire nights and thought that this might fill the void in a way. Also Jacob came home from school that day and they made milk shake that day. So he was all excited about making some at home.

Toasted Marshmallow Milkshake

adapted just slightly from Spike Mendelsohn’s recipe

makes two small or one large milkshake

8-10 large marshmallows
3 large scoops vanilla ice cream or a heaping 1-cup of vanilla ice cream
1/2 cup of milk
1/2 teaspoon vanilla extract

Place marshmallows on skewer and toast until slightly charred over a gas flame. If you don’t have skewers or a gas range, you can toast the marshmallows on a sheet tray in the broiler for 2 or 3 minutes. Keep an eye on the marshmallows as they’re in the oven. They’re liable to burst into marshmallow flames pretty quick. Place on a plate to cool slightly.

In a blender mix together ice cream, milk, vanilla extract and toasted marshmallows. Save one or two toasted marshmallows to top the milkshake(s). Blend well. For a thinner milkshake add more milk. If you’d like it a bit thicker… add more ice cream. Pour into glasses and top with toasted marshmallows. Enjoy on the quick.

Review: I did not use her method for toasting the marshmallows because Mike feared I would burn the house down. I put the marshmallows on a cookie sheet and put it under the broiler for a few minutes. I think this does a lot faster then doing 8-10 over a gas flame and the flavor came out the same...toasted. I liked the way the milkshake tasted but it was SUPER sweet and just a little goes a long way. I am not sure I would make this again just because it was so sweet but maybe next time try making it with chocolate ice cream...sort of like a s'more milkshake...just put a graham cracker garnish and there you go...

Friday Night Cocktails and Fire Pit!

So this summer we have started a little thing called Friday Night Cocktail night with our neighbors. We get the fire pit going and start pouring the drinks.



This last Friday Nights featured drink were Pomegranate Margaritas using the POM Wonderful juice I received.

Pomegranate Margaritas


1 3/4 cups chilled Pomegranate juice

Kosher salt

1 1/2 cups silver Tequila

1 cup Triple Sec

2/3 cup fresh lime juice

Ice cubes

8 lime wedges, for garnish

Directions:

Pour 1/4 cup of pomegranate juice in a saucer and dip rims of glasses. Then dip moistened rims of glasses in kosher salt. Stir the remaining 1 ½ cups of pomegranate juice, the tequila, triple sec and lime juice. Working in batches, shake the mixture in a large ice-filled shaker, then strain into the glasses. Garnish each margarita with a lime.


Review: OH MY wow this drink really knocks you on your butt...in a good way of course. It was super yummy and something I would make again. I did not use the salt because we drink out of plastic cups and there was no need to be fancy. I also used Cointreau instead of the triple sec because that is what I had in the house. It is a strong drink but I don't think I used enough ice and just realized that 3 of us drank it when it serves 8. Lets just say that we all had a really good time...

POM Wonderful

I was contacted by someone at POM Wonderful to see if I was interested in trying out some of their product. So of course my answer was YES!!! I mean who wouldn't want something for free and who wouldn't want something yummy like pomegranate juice. Let me tell you the ideas have just been flowing...

So I waited patiently (only about a week) for my case to arrive.





Since I received a case of 8 x 8oz bottles I am going to try and do at least a few different things with it. So of course that night with dinner we all shared a bottle of just straight up POM juice. I have always seen the bottle in the supermarket but never really thought about buying it before. For some odd reason I thought it would taste different from what you taste when you eat a fresh pomegranate but it did not.

Mike was making fun of me because he wanted to know why it was called POM Wonderful. Thank you to the internet and company websites I was able to just look it on and let him know:


The "Wonderful" actually refers to the variety of pomegranates we grow in our California orchards. All of the fresh pomegranates we sell are of the Wonderful variety as is the juice we press at our own facility

My Review: The juice it super yummy and taste really fresh to me. It is on the tart side and reminds me of cranberry juice. I have to say I love the shape of the bottles which I know has nothing to do with the taste but makes me happy.

DIY Frozen Coffee Drink

Not sure if I have mentioned this before but one of the things I want to do this summer is figure out how to make really good iced coffee at home. I know it isn't really that much money to go out and get some but after a while it does add up. So in my search of ideas on how to achieve my ice coffee I came across a frozen type recipe as well...so of course I had to try it out.




Frozen Coffee Drink

Savory Sweet Life

1.5 cups of crushed iced

2-1 ounce shots of espresso *read below using coffee as a substitute

3/4 cup of milk

3 tbl. of sugar (more or less depending on preference)

*If you don’t have an espresso machine, use 3/4 cup of double strength (strong) coffee mixed with 1/2 cup of milk and increased crushed iced amount by 1/4 cup.

Blend all the ingredients except the whipped cream in a blender for 30-45 seconds. Pour into a tall glass and top off with whipped cream and garnish with chocolate syrup. Best served with a straw. Enjoy!


Review: OH MY GOODNESS!!! I have been making some double strength coffee in the morning so I can have iced coffee in the afternoons (one thing I have learned from reading all the recipes for iced coffee). I decided that yesterday I would try this recipe out instead of just having iced coffee. It came out perfect the first time I made it which was a relief since I tried a different one a couple of weeks ago and it was horrible. I really think the success was due to having the ice crushed before you put it in the blender or before you add the rest of the stuff. I can't wait to try it flavored next time.

Sangria What a Wonderful Drink

One day I was looking at some other food blogs out there and came across a posting on Sangria. With the 4th of July coming it was the perfect time to try and make a new drink instead of the standard stuff. I was also able to get a recipe off of Amazon from one of the Sangria cookbooks out there.

One of the books had three or four recipes but I picked the one that seemed like a simple not fancy recipe. I had this HUGE bottle of wine leftover for some time now and was trying to figure out what to do with it. It actually ended up being more then 1 standard bottle but I just increased everything else accordingly.

Sangria

1 bottle red wine
1/4 cup Cognac
1/4 cup Cointreau
1/4 cup simple syrup
2 oranges, cut into half wheels
2 lemons, cut into half wheels
2 peaches, cut into chunks


Place all into a pitcher and refrigerate for at least 4 hours but more is best. Serve over ice and enjoy!

Review: OH YUMMMY!!! I put this together the night before and had it in the frig for I would say about 18 hours before I served it. I have one of those big containers with the spout on the front and a freeze thing in the middle of it. I didn't fill it all up but it was enough for the three of us that drank it. I sort of felt like I had to much fruit in there but that is something that is easy to adjust the next time...and yes there will be a next time. I actually forgot to take a picture of it in the thing but I took a picture this morning of what was leftover. Which I will enjoy as a little after dinner snack. I might top it with some lemon/lime type soda to dilute it a little bit and it give it some fizz.

I remember when I was young my mom would make it for the summer parties. I remember because Heidi and I always wanted to eat the fruit that was in the jug. Never realized
why we weren't allowed until I got older of course. Also now that I have a little one who wanted to drink this juice and eat the fruit it has come full circle.

Holiday Party 2008


This past weekend we had a holiday party for our family and friends. I decided this year to take off the day before, so I could get all of my cooking and baking out of the way and wasn't exhausted come Saturday night. We had a huge turnout and it was great to see people catching up and also getting acquainted with one another. I made some new recipes this year that I absolutely loved how they turned out and they seemed to have been a hit with everyone as well. Unfortunately, I didn't get any pictures of the food (maybe someone will send me some!), but at least I can share the recipes!

Ingredients:
2 - 3 oz. boxes of pineapple jello
1/4 cup coconut milk
coconut rum (see amounts below)
cold water (see amounts below)
Directions:
- Chill rum in freezer for 2 hours before making.
- Dissolve the jello according to box directions in 2 cups boiling water for 2 minutes.
- Depending on how strong you want your shots follow these guidelines:
> For mild shots add 1 cup cold rum, 3/4 cup cold water 1/4 cup coconut milk
> For stronger shots add 1 & 1/2 cups cold rum 1/4 cup cold water, and 1/4 cup coconut milk
- Mix with a spoon, then ladle into 1.25 oz. shot glasses of your choice. (You can either pour the mixture into the shot glasses or use a turkey baster to transfer the liquid into the cups.)
- Put into refrigerator. If you want a fast set put them into the freezer for an hour. Or make ahead and freeze for a while and then bring out about an hour before the party.

Review: Absolutely love these jello shots! Some people like them stronger. I, personally, like when you don't taste the alcohol, but know it is there, so I don't make them too strong. I have seen recipes where people omit the "extra" water and use all rum. Another tip is to spray the Solo cups (available at Party City) with Pam, which makes it easier for them to slide out.


Ingredients:
1 can (19-ounce) cannellini beans, drained and rinsed
3 tablespoons olive oil
3 tablespoons freshly squeezed lemon juice (about 1 lemon)
Coarse salt and ground pepper

Directions:
In a food processor, combine cannellini beans, olive oil, 3 tablespoons fresh lemon juice (about 1 lemon); season with coarse salt and ground pepper. Puree until smooth.
Place puree in a serving bowl, and lightly sprinkle chili powder over the top, if desired. Serve dip with toasted pita chips.

Review: Super simple to make and I was surprised at how much I actually liked this! I am not big into hummus, but this may swing my vote. (haha) I actually doubled this recipe (which in my Cuisinart food processor was a bit of a chore) and doubled everything except the lemon juice. I just used 1 lemon and thought it was perfect.
Ingredients:
1 lb. package Ziti pasta or Rigatoni
24 ounces ricotta cheese
1 pound shredded mozzarella cheese
1 egg, beaten
1 (32 ounce) jar spaghetti sauce
1/4 cup grated Parmesan cheese
Directions:
- Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
- In a medium bowl, mix ziti, ricotta cheese, mozzarella cheese, egg and 1 1/2 cups spaghetti sauce.
- Preheat oven to 375 degrees F (190 degrees C).
- Lightly grease a 9x13 inch baking dish and spoon in ziti mixture. Top with remaining spaghetti sauce, followed by Parmesan cheese.
- Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.


Review: This will be my baked ziti recipe going forward. Of course, I didn't have one before, knew in my head what the ingredients should be, so this was perfect for tying it all together. I have read some reviews that said they would cut down the amount of ricotta, you absolutely can do that. I really enjoyed this. I made a double batch for the party and it filled up 2 half-trays, which worked out perfectly for 40 people (along with the rest of the food). I make my own sauce, so not exactly sure how many ounces of sauce I put into it, but it was the equivalent of 4 large (24 oz) cans of crushed tomatoes and whole tomatoes with one small can of tomato paste, which are cooked down to remove excess water). I made these ahead and put them in the fridge and then baked for 30 minutes ahead of eating. I kept them covered with foil.




Ingredients:
1 pinch salt
1/2 cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
1/4 cup dry white wine
1/4 cup lemon juice
1/4 cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Directions:
- Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
- Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
- Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
- To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.
Review: Another of my faves and one that had several people asking for the recipe (including Heidi and Michelle (of the Baking Buddies blog)'s mom! =). I had never made this before, but decided this would be relatively easy to make and if nothing else, should be good for a party dish! The recipe above is for 2 servings. Luckily, Allrecipes.com has a servings conversion, which I took full advantage of and besides the reviews was one of the reasons I picked this recipe, as I had bought 10 lbs. of Perdue Chicken Tenders at Costco and needed to convert the recipe based on the pounds of chicken I had! This turned out to be 27 servings! The best part is when you convert to 27 lbs., the conversion takes you literally, so it told me 13 1/2 pinches of salt - lol! Can you imagine counting that out?!

Needless to say, I just took a large Ziplock bag, poured in some flour and shook in some Lawry's Seasoned Salt. I used that to coat the chicken and cook them in 2 separate pans (one dutch oven and one nonstick pan) to cook them faster. The nonstick pan took longer and didn't brown as well. I either sprayed the pans or put in olive oil after each set of chicken tenders to make sure they didn't stick to the pan and then once cooked put them straight into the half trays (the double batch made for 2 half trays). After all of the chicken was cooked, I used the dutch oven to make the sauce.

I put in 3 cups of a white wine and 3 cups of chicken broth, then added 1 stick of unsalted margarine at a time. I was hoping to use less margarine, but the taste wasn't quite right, so I ended up using 3 sticks. I also used 5 lemons (rather than the 3 cups per the conversion). I debated whether or not to add the sauce as I wasn't serving it until the next day, but thought it would be a good marinade, so poured it over top of the chicken.

The next day, I put it in the oven with the 2 trays of ziti and set the oven for 375 degrees for 30 minutes and then put the oven on warm. It seemed to work out well and I would definitely recommend this. I even got compliments that it looked like I had gotten the party catered!

Michelle's July Recipe - Blueberry Heaven Smoothie

I think one of my favorite summer fruits has to be the blueberry. I just can't get enough of them when it is this time of year. They aren't usually around long enough in my house to make it into any type of recipe...except for maybe blueberry pancakes on a Saturday morning. So when they were on sale this past week at the supermarket I bought a couple of pints.

After seeing that Heidi took care of making something unique (BBQ sauce) with them and something standard with them (blueberry muffins). I didn't really know what I wanted to make using the perfectly blue little guys. I found a website totally dedicated to Blueberry recipes and new I would find something there.

Ingredients:
1 package (12-ounce size) frozen thawed blueberries OR 2 1/2 cups fresh blueberries
1 1/4 cup apple juice
1 cup vanilla ice cream
1/4 cup milk
3/4 teaspoon ground cinnamon

Directions: In blender combine blueberries, apple juice, ice cream, milk and cinnamon until smooth. Serve immediately. Serves/makes 4

Review: Overall I really thought the taste of this recipe was Super Yummy! To me it tasted like a liquid form of a blueberry pie or a blueberry crisp which is probably because of the cinnamon added to it. The only negative thing Mike and I both thought about this smoothie was that it wasn't cold enough for us. That is partly my fault because the apple juice was at room temperature since I just bought it.

Michelle's August Recipe - Citrus Spritzers

It is the end of August and I need to complete my recipe for this month. Once I saw this recipe in the new Everyday Food magazine I knew I was going to make it.

Citrus Spritzers
serves 8
2 cups fresh orange juice (from 6 oranges), strained
1/2 cup fresh lemon juice (from 2-3 lemons), strained
1/4 cup fresh lime juice (from 2 limes), strained
2/3 cup superfine sugar
4 cups seltzer or club soda
1 ounce vodka per serving (optional)
orange, lemon or lime slices, for garnish (optional)

In a large pitcher, combine juices and sugar; stir well to dissolve sugar. When ready to serve, add seltzer; stir gently to combine. Serve over crushed ice; add vodka (if using), and garnish with citrus slices, if desired.

Review: I thought it was good but I didn't do it completely the Martha way...I didn't use fresh OJ and just used what I had in the frig. I also made a mistake and added the seltzer in with the juice and sugar so it wasn't as fizzy as it could have been. I liked the taste of it but next time I would make simple syrup instead of using the superfine sugar and make it a tiny bit sweeter. Also the color of my didn't come out the same color that is in the mag but that could just be because of something else.
